How To Make Fiesta Chicken Salad

Read on to find ingredients and preparation instructions for one of our most popular dishes and easy to make at home – Fiesta Chicken Salad!

Fiesta Chicken Salad Recipe

Servings

Preparation Time
10-15 Minutes

Ingredients

  • 4 –grilled chicken breasts (or 4-5 ounces of chicken for each person if using a rotisserie chicken)
  • 1 to 2 – bags of the salad mix of your choice
  • 1 cup crumbled tortilla chips for garnish
  • 1 or 2 tomatoes – diced (optional)
  • ¼ red onion – diced (optional)
  • 1 cup of shredded or crumbled cheese of your choice (recommend cheddar, pepper jack, feta, queso fresco or cotija)
  • 1 batch of Black Bean & Corn Salsa (see recipe below)
  • 1 batch Lime Chipotle Dressing (see recipe below)

Preparation Instructions

  1. Toss your salad greens in ¾ cup of Lime chipotle dressing
  2. Divide salad into four bowls
  3. Top salads with black bean & corn salsa and grilled chicken
  4. Garnish each salad with diced tomatoes, onions, ¼ cup cheese and ¼ cup of crumbled tortilla strips then serve immediately

Black Bean & Corn Salsa Recipe

Ingredients

  • 1 can, 14 ounces Black Beans, rinsed & drained
  • 1 can, 15.25 ounces Del Monte Fiesta Corn with Red & Green Peppers or Del Monte Southwestern Corn with Poblano & Red Peppers
  • 1 & ½ teaspoon cumin
  • 1 lime, juiced
  • 2 teaspoons of your favorite hot sauce
  • 2 tablespoons vegetable, olive or salad oil
  • Salt & pepper to taste

Preparation Instructions

  1. Combine all ingredients in a bowl
  2. Set aside for 15 minutes for the flavors to combine
  3. Toss & serve

You can also add a drained can of Rotel Tomatoes & Green Chili Peppers for a flavor boost


Lime Chipotle Dressing Recipe

Servings
~6 2 Tablespoon servings

Ingredients

  • 6 Tablespoons Lime Juice
  • 2 Tablespoons Honey or Agave Nectar
  • ½ cup vegetable or olive oil
  • 1 or 2 chipotle peppers (in adobo sauce)
  • ½ to 1 Tablespoon of adobo sauce
  • 2 garlic cloves
  • 1 teaspoon fresh ginger
  • 1 Tablespoon chopped cilantro
  • ¼ cup Rice vinegar
  • Salt & pepper to taste

Preparation Instructions

  1. Combine all ingredients in a blender or food processor and process until smooth
  2. Season to taste with salt & pepper
  3. Use immediately or transfer to an air tight container to refrigerate until ready to use
